A Special Memory


On my first trip to New York with my partner, he surprised me with an unforgettable experience: dinner at Eleven Madison Park, a Michelin-starred restaurant. Knowing how much of a foodie I am, he planned this as a special treat—and it was truly extraordinary.


The entire meal was a beautifully crafted vegetarian tasting menu, each dish more inventive and exquisite than the last. The balance of flavors, the artistry of the plating, and the elegant ambiance made the evening feel like pure magic.


But the surprises didn’t stop there. As we left the restaurant, we were handed a small package of olive oil and honey granola, a thoughtful gift to extend the experience beyond the dining room. The granola was perfect—crispy, lightly sweetened, with a hint of salt and a deep richness from the olive oil.

That little gesture stayed with me, and ever since, I’ve wanted to recreate it at home. This recipe is my own version of that granola, bringing back the flavors of that unforgettable night every time I take a bite.

Olive Oil & Honey Granola Recipe

Ingredients

  • 1/3 cup olive oil

  • 1/3 cup honey

  • 2 1/2 cups rolled oats

  • 1/2 teaspoon flaky sea salt

  • 1/2 cup sliced almonds

  • 1/2 cup pumpkin seeds


Instructions

  1. Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.

  2. Mix the wet ingredients: In a large bowl, whisk together the olive oil and honey until well combined.

  3. Add the dry ingredients: Stir in the oats, sea salt, almonds, and pumpkin seeds. Mix until everything is evenly coated.

  4. Bake: Spread the granola in an even layer on the prepared baking sheet. Bake for 25 minutes, stirring halfway through to ensure even browning.

  5. Cool & store: Let the granola cool completely on the baking sheet—it will crisp up as it cools. Store in an airtight container.
